The high temperature reached by wood-fired or gas fired-ovens keeps toppings from burning and pizza crust from tasting like a biscuit. In winter, you can keep the dough at room temperature. Instead, in warm weather you\u2019d better use ice water to make dough and keep it away from heat sources.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">The weight of the dough varies according to the size of the pizza.
