d\u2019exp\u00e9rience dans l\u2019entreprise, nous en sommes arriv\u00e9s \u00e0 la conclusion que pour faire une bonne focaccia traditionnelle il faut des mati\u00e8res premi\u00e8res de grande qualit\u00e9 ; donc de la farine de meule bio et ensuite une maturation lente de la p\u00e2te (48 heures).<br \/>Nous avons cuit la focaccia dans le four \u00e0 gaz Dolce Vita dans un plat rond \u00e0 minutes<\/li>\n<li class=\"li2\">Pendant ce temps, faire cuire le poulpe, l\u2019assaisonner et le m\u00e9langer avec les pommes de terre.<\/li>\n<li class=\"li2\">Pr\u00e9parer le pesto de roquette avec les pignons et le parmesan<\/li>\n<li class=\"li2\">Placer la focaccia ti\u00e8de dans le plat, ajouter le pesto et ensuite disposer le poulpe avec les pommes de
