Nell\u2019uso pi\u00f9 comune il termine farina identifica il prodotto proveniente dalla macinazione del grano tenero, mentre dal grano duro viene prodotta la semola. Oltre al tipo di grano, la semola differisce dalla farina per granulometria, la prima pi\u00f9 grossa mentre la seconda pi\u00f9 fine.<\/p>\n<p>Al giorno d\u2019oggi di farine ne esistono tantissimi tipi e variet\u00e0 derivanti da cereali, legumi, frutta secca etc. Abbiamo farine di farro, di orzo, di segale, di lino, di ceci, castagne e ancora farine integrali e bianche. C\u2019\u00e8 solo l\u2019imbarazzo della scelta.<\/p>\n<p>In questo post inizieremo a fare chiarezza sulle farine di grano analizzandone le varie tipologie.<\/p>\n<p>Chiariamo per prima cosa un dilemma fondamentale: che differenza c\u2019\u00e8 tra farina raffinata e farina integrale.<\/p>\n<\/div><\/div><\/div><\/div><\/div><div class=\"fusion-fullwidth fullwidth-box fusion-builder-row-2 00<\/strong>&nbsp;\u00e8 quella pi\u00f9 raffinata e priva di particelle di crusca e cruschello (due sottoprodotti della macinazione). La farina integrale invece \u00e8 quella con la pi\u00f9 alta percentuale di cruschello e crusca che hanno anche notevoli propriet\u00e0 nutritive. Possiamo affermare che la farina integrale rispetto a quella raffinata ha una maggiore quantit\u00e0 di amido, di fibre, proteine, vitamine, acidi grassi e ceneri (sali minerali). Inoltre se macinata a pietra \u00e8 ancora meglio. Questo tipo di lavorazione avviene a bassa intensit\u00e0 e quindi non si provoca il surriscaldamento della farina che mantiene le propriet\u00e0 organolettiche e nutraceutiche.<\/p>\n<p>Ma il salto dalla farina 00 alla farina integrale non \u00e8 cosi immediato, infatti in base alla percentuale di contenuto in ceneri abbiamo diversi step intermedi con farine con caratteristiche differenti: farina tipo 0, tipo 1 o tipo 2.<\/p>\n<p><strong>Farina 0:<\/strong>&nbsp;Meno raffinata del tipo 00 ma che comunque \u00e8 stata privata di gran parte dei suoi principi nutritivi.<\/p>\n<p><strong>Farina tipo 1:<\/strong>&nbsp;contiene un maggiore quantitativo di crusca e di germe del grano, le parti pi\u00f9 ricche di sostanze nutritive.<\/p>\n<p><strong>Farina Tipo 2:<\/strong>&nbsp;o \u201csemi-integrale\u201d \u00e8 una farina caratterizzata da granulometria grossolana e da una presenza maggiore di componenti fibrose e germe del seme.<\/p>\n<p><strong>Per fare la pizza in casa noi consigliamo di non utilizzare farine 00, ma di partire sempre almeno da una farina 0 che ha un minimo contenuto di proteine.<\/strong><\/p>\n<\/div><\/div><\/div><\/div><\/div><\/p>\n","protected":false},"excerpt":{"rendered":"","protected":false},"author":1,"featured_media":2172,"template":"","meta":{"_acf_changed":false,"footnotes":""},"class_list":["post-2171","recipe","type-recipe","status-publish","has-post-thumbnail","hentry"],"acf":[],"_links":{"self":[{"href":"https:\/\/www.alfaforni.com\/it\/wp-json\/wp\/v2\/recipe\/2171","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/www.alfaforni.com\/it\/wp-json\/wp\/v2\/recipe"}],"about":[{"href":"https:\/\/www.alfaforni.com\/it\/wp-json\/wp\/v2\/types\/recipe"}],"author":[{"embeddable":true,"href":"https:\/\/www.alfaforni.com\/it\/wp-json\/wp\/v2\/users\/1"}],"version-history":[{"count":2,"href":"https:\/\/www.alfaforni.com\/it\/wp-json\/wp\/v2\/recipe\/2171\/revisions"}],"predecessor-version":[{"id":61067,"href":"https:\/\/www.alfaforni.com\/it\/wp-json\/wp\/v2\/recipe\/2171\/revisions\/61067"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/www.alfaforni.com\/it\/wp-json\/wp\/v2\/media\/2172"}],"wp:attachment":[{"href":"https:\/\/www.alfaforni.com\/it\/wp-json\/wp\/v2\/media?parent=2171"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
