{"id":9855,"date":"2018-04-05T16:00:21","date_gmt":"2018-04-05T14:00:21","guid":{"rendered":"https:\/\/www.alfaforni.com\/beans-and-pancetta-baked-in-a-clay-pot\/"},"modified":"2019-05-14T10:30:27","modified_gmt":"2019-05-14T08:30:27","slug":"beans-and-pancetta-baked-in-a-clay-pot","status":"publish","type":"recipe","link":"https:\/\/www.alfaforni.com\/us\/recipe\/beans-and-pancetta-baked-in-a-clay-pot\/","title":{"rendered":"Beans and pancetta baked in a clay pot"},"content":{"rendered":"<p><strong>Serves 6<br \/>\nIngredients:<br \/>\n<\/strong><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\"> 500 g dry beans<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 200 ml tomato passata<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 200 ml mustard<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 3 tbsps. balsamic vinegar<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 50 g sausage<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 100 g pancetta <\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 2 garlic cloves<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> \u00bd onion<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> salt<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> black pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> freshly grated nutmeg<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 2 tbsps. breadcrumbs<\/span><\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Put the beans in a clay pot, fill it with water and add a teaspoon of baking soda; soak beans overnight.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">The next morning, beans should have absorbed water and doubled in volume. Add the tomato passata, the mustard and the balsamic. Mix well and add water periodically to keep beans covered. Peel and chop garlic and onions and add to the mix with salt, pepper and nutmeg.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place the sausage and pancetta onto a grill inside a roasting pan and bake at 140\u00b0C (280\u00b0F). Cover the pot and put it next to the pan,<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">When sausage and pancetta are golden, remove the pan from the oven. Cut them into small pieces and add them to the pot. Check the beans and, if necessary, add some water.
