{"id":9864,"date":"2018-03-01T15:55:09","date_gmt":"2018-03-01T14:55:09","guid":{"rendered":"https:\/\/www.alfaforni.com\/rosticciana-with-thyme-vinaigrette\/"},"modified":"2019-05-14T10:31:02","modified_gmt":"2019-05-14T08:31:02","slug":"rosticciana-with-thyme-vinaigrette","status":"publish","type":"recipe","link":"https:\/\/www.alfaforni.com\/us\/recipe\/rosticciana-with-thyme-vinaigrette\/","title":{"rendered":"Rosticciana with thyme vinaigrette"},"content":{"rendered":"<p><strong>Serves 6<br \/>\nIngredients:<br \/>\n<\/strong><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\"> 2 whole racks of pork ribs<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 1 tbsp. salt<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 1 tbsp. black pepper<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 1 tbsp. garlic powder<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 2+2 tsps. thyme<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 4 tbsps. mustard<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> 4 tbsps. apple vinegar<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> \u00bd lemon<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> \u00bd glass of lemon juice<\/span><\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Put the ribs bone side up and separate the tips from the rest with a boning knife. Remove excess fat and turn to the meat side. Cut between the membrane and the bone and grab a piece of the membrane. Slowly pull it away from the ribs.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Mix salt, pepper, garlic and two teaspoons of thyme to obtain a homogeneous compound.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Mix the mustard, apple vinegar, lemon juice and the remaining two spoons of thyme in a small bowl then whisk it to make a vinaigrette. Season to taste and pour in a squeeze bottle.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Pour the vinaigrette all over the ribs.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Place the ribs vertically in a rib rack and into a roasting pan and bake at 170\u00b0C (340\u00b0F) near the fire. <\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">When the ribs are golden, rotate the pan for even cooking.
