Gnocchi alla sorrentina

Alfa Pizza presents the video recipe for cooking tasty Gnocchi alla Sorrentina using the Gastone oven.

  •  Ingredients for 6 people
  •  Cooking flame
  •  Oven temperature 300°C
  •  Cooking time: 30 minutes


  • Gnocchi – 1 kg
  • Tomato purée – 1,2 kg
  • Basil
  • Parmigiano – 100grs
  • Garlic
  • Mozzarella – 250 grs
  • Extra-virgin olive oil
  • Salt
  • Pepper


  1. light the oven, keep the flame low and close the door
  2. pour the oil in a pan with garlic
  3. add the tomato purée
  4. add salt and cover to finish cooking
  5. add the basil at the end of cooking
  6. cut the mozzarella in small pieces
  7. boil the water and add salt
  8. put the gnocchi in the water
  9. let’s begin with a layer of tomato sauce
  10. pour a layer of gnocchi
  11. then put mozzarella and parmigiano
  12. and then again: gnocchi, mozzarella and parmigiano
  13. bake after about 20 minutes when the cooking floor will reach the temperature of 180/190°C
  14. and the pyrometer will show about 300°C
  15. bake for about 15 minutes
  16. after cooking raise the flame for 2-3 minutes to brown
