Salmon in salt crust

Alfa Pizza presents the video recipe to prepare a perfect salmon in salt crust using the Duetto wood fired oven.

  • extra virgin olive oil
  • cooking salt
  • garlic
  • cherry tomatoes
  • salmon
  • parsley


  1. we preheat the Duetto wood fired oven
  2. we pour a base of salt on the bottom of the tray
  3. we fill the fish with cherry tomatoes, parsley, garlic, olive oil and salt
  4. we completely cover the salmon with the rest of the salt
  5. we wet it with water so as to compact better the salt
  6. if you prefer further compacting the covering, mix the cooking salt with egg yolks
  7. we bake on the refractory brick at 250 °C for almost 40 minutes
  8. we recommend to season the salmon with a good french dressing
